If you are like me and my family you probably love to have treats, and because of this I am always on the look out for alternatives to sugar. When I heard about Yacon syrup I was really interested in trying it as it is rich in antioxidants as well as being a good alternative for people with diabetes. This sweet syrup that comes from a root and is primarily made up of water and fructooligossacharide (FOS) which is a short chain sugar that has lower calories than other sugars and a high fibre content, furthermore FOS is a prebiotic which means it aids digestion.
Recipes and Ideas for Yacon
However once I bought some I found Yacon recipes hard to come across as yacon syrup has had less publicity than agave and other sweeteners.
If you are looking for Yacon recipes then you can just take a traditional recipe that uses either molasses or brown sugar and substitute it with Yacon syrup. I find it is delicious mixed in with plain natural yogurt , goji berries and chia seeds as a snack or if I want to bulk it up for breakfast I just add some raw nuts and seeds for a delicious start to the day. It also tastes great over buckwheat pancakes with sliced pears.
It can also be used in savory dishes for example if i am doing a stir fry I like to caramelize my onions slightly so I just add a tablespoon of yacon to give a stir fry a slightly sweeter taste.
Here is a great recipe for you to try, which will definitely keep the family happy especially if they have a sweet tooth.
Yacon Choccie Biccies:
- 2 1/2 cups almond flour
- 1/2 teaspoon Himalyan sea salt
- 1/2 teaspoon baking soda
- 1/2 cup coconut oil
- 1 tablespoon vanilla extract
- 1/2 cup yacon syrup
- 1/2 cup cacao nibs
(Pre-heat oven 350F/180C)
1.Place flour, salt, baking soda and cacao nibs in a large mixing bowl
2.Put coconut oil in a pyrex bowl over hot water until melted then add syrup and vanilla extract mixing well.
3.Add all the ingredients together in your large mixing bowl
4.Mix all ingredients together and make into 1/2 inch balls
5.Then place on baking paper in a baking tray
6. Place in your preheated oven for 7-10mins
7.Cool and serve
So I hope this gives you some ideas of how to use yacon syrup in your recipes. I personally find it is so important to get your family enjoying food while ensuring it is as nutritious as possible and free from highly processed sugars and flours. That is why I personally choose to use sweeteners such as yacon syrup rather then conventional sugars. The great thing about it, is you can use it in almost any recipe where people usually use golden syrup or other sweeteners, there are no rules just enjoy your food and have fun. Also remember the more raw food you eat the better.
